- Preheat oven to 180C (160C fan forced)
- Put 2 teaspoons of lemon juice into 2/3 cup milk and leave for 5 minutes to curdle
- In a big bowl, sift in:
2-1/3 cup self raising flour
1-1/3 cup sugar
1 teaspoon baking soda
1 teaspoon salt
- Next put in:
100 gr butter softened or melted
2 or 3 big bananas mashed
- Mix lightly then add 2 eggs and mix thoroughly.
- Bake in 25cm (10 inch) square cake tin lined with baking paper at the bottom for 45-50 mins.
